A Gluten Plus guide to the Cowboys’ new menu

Sure, the Dallas Cowboys haven’t enjoyed the Cincinnati Bengals’ level of success these past few years, but few have. Still, fans have been frustrated, calling out, “Scaia wasn’t even talkin’ about his precious hometown team until a couple years ago. The term, ‘bandwagon jumper,’ is thrown around all too often these days, but in this case…”

The chefs at AT&T Stadium hear your cry. AT&T Stadium’s gettin’ old, so it’s gettin’ a remodel. So is the menu.

Loyal Scaiaholics know I meet with Legends Executive Chef George Wasai before the season each year.

As the Cowboys wrapped up training camp, he demanded I come by the stadium to try the refreshed menu.

“Maybe he’ll quit asking about Cincinnati-style chili if we shove some ossu buco in front of him,” they said.

And it worked.

Texas Veal Osso Buco

A wagyu beef patty seasoned to perfection, served on a fresh, locally baked brioche bun, truffle aioli, Havarti cheese and arugula.  Available at:  Hall of Fame Southeast and Southwest Concession StandsFresh herb & garlic seared veal shank with roasted cremini mushrooms, steamed baby carrots & marsala-thyme demi-glace.

Served in suites and clubs, Wasai explained this was his favorite new dish.

Because a reporter asks, I had to verify this claim. I do not know what marsala-thyme demi-glace is [I once dated a woman named Marsala Thyme, though], but it gave the dish a bit of sweetness, just a bit, that worked well with the carrots.

But I’m a man, and I require something to chomp on.

Honey Bourbon Steak Sandwich

We talk about the importance of dishes being “walkable” here at #Scaiablog. You can’t just wander around with with a fork and knife to slice into a wagyu steak when you’re at a ballgame. Same goes for this next sandwich that thinks it’s better than you.

Wagyu Truffle Burger

Next to the Wagyu Truffle Burger, fellow Chef Heather Fuller says you can now enjoy the Buffalo Chicken Empanada:

For efficiency experts, food that has been emapanaed is likely to be more walkable. Plus, look at how they unite cultures with the emapanada served over a bed of French fries. Silver Club Grill Stands are like a modern day UN.

On the one hand, tacos are already delicious. Why add a Frito? On the other, the Frito gives the taco a crunch, but since the dish comes in soft taco form, you don’t have to worry about that crunch leading to a mess of taco shell bits scattered around your seat.

Fritos also have a starring role in the dessert section. It’s possible Legends has a sponsorship deal with Frito-Lay.

“But waffles are delicious, also!” one of the chefs exclaimed. Given how much time we spend arguing with strangers about politics online, you might think America’s best days are behind us. But we still have trailblazers turning waffles into dessert.

And Legends is an organization that reaches out to all fans.

The Vegan Tostitos® Ultimate Nachos were topped with vegetarian chili. The Vegan Hot Dog and Vegan Chili Dog also had plant-based chili. Their goal was to make these dishes taste hearty.

You know what else doesn’t taste vegan? Beef, pork and chicken.

They’ve also got gluten free dishes. Those, of course, would go against the #trending Gluten Plus Robust Eating Program [patent pending], but Fuller explains they want to appeal to fans of all tastes.

When they let reporters try the new food, it’s possible I was more focused on samples of the steak sandwich, truffle burger, empanadas and steak sandwich.

Rowdy was also at this summit to announce he’s been immortalized in thermos form. Here you can see Rowdy celebrating and Wasai tolerating him.

I had a flight out later that day. I was meeting some family in Connecticut. Right between Giants and Patriots country, one of my cousins became a Cowboys fan. Rowdy and Wasai explained you can put water or soda in it, or you can give it to your kid to take to their own games and put Gatorade in there. I grabbed one for my cousin, though I suspect he’s not thinking about his electrolytes when he’s drinking during the game.
